Senior Sous Chef – Luxury Safari Lodge – Eastern Cape Our client, a prestigious private game reserve and luxury safari lodge in the Eastern Cape, is seeking an experienced and highly skilled Senior Sous Chef to join their culinary team. This role is ideal for a chef with strong leadership experience, a refined culinary background, and the ability to maintain exceptional quality and service standards in a 5-star hospitality environment. Responsibilities Oversee daily kitchen operations, manage the kitchen brigade, and ensure seamless preparation and delivery of high-quality cuisine. Lead daily kitchen shifts, conduct pre-shift briefings, and maintain clear communication with front- and back-of-house teams. Manage guest interactions regarding menu requests, dietary needs, and special occasions, ensuring alignment with the lodge’s standard of excellence. Implement standardized recipes, portion control, plating standards, and food safety procedures; maintain an organized system for menus, recipes, and kitchen documentation. Handle stock control, ordering, food costing, wastage management, and mentor junior chefs to develop skills and maintain consistent performance. This position offers a salary of R22,500 per month and operates on a 21/7 work cycle, providing focused work periods followed by dedicated time off. Requirements Culinary Arts diploma or formal qualification. Minimum 5 years senior culinary experience within 5-star hospitality or lodge environment. Proven leadership managing kitchen teams. Excellent English communication skills. Strong knowledge of food costing, stock control, and wastage management. Competence with GAAP POS and Microsoft Office.
