Responsibilities Jointly manage a busy fine dining restaurant and ensure every guest receives personalised attention. Delight guests with trendsetting and innovative products and outstanding service experiences while driving operational profitability by meeting sales targets and managing costs. Plan and contribute to food and beverage menu offerings and promotions; set and maintain service standards. Conduct regular guest service, menu, sales, and standards training; lead teams; promote teamwork and staff engagement and retention. Manage staff processes including personal presentation, recruitment, performance, conduct, and daily restaurant operations (bookings, stock control, kitchen and service preparation, cleaning and hygiene protocols, service, and cash-ups). Maintain a neat and professional appearance and demonstrate excellent verbal and written communication skills in all interactions. Lead and manage a team with strong wine and beverage knowledge to enhance the guest experience and support financial management and selling skills. Work with flexibility, including shifts, and operate with own transport as required. Qualifications Matric certificate and a qualification from a recognised South African or international educational institution; Cape Wine Academy, WSET level 2 or 3, and Cocktail Bar courses. Experience in a sommelier role or equivalent with a strong wine and spirit background; fine dining restaurant experience and food knowledge. Track record in leading and managing large teams; at least 3 years in a similar role in a busy, up-market restaurant; experience with technology including Micros/speed point machines and MS 365. Flexibility to work shifts; ability to work with own transport. Other requirements Your extensive knowledge of food and beverages, including cocktails, wines, and spirits, will enhance the guest experience.
