This role forms part of the Food & Beverage team at Village n Life, based at The Bay Hotel in Camps Bay. The Role As Food & Beverage Manager, you’ll lead the full F&B operation at The Bay Hotel with a steady hand and a clear eye on service standards, cost control and consistent guest satisfaction. Your daily focus sits on smooth restaurant and bar operations, accurate financial control, firm team leadership and reliable adherence to hospitality standards that hold up seven days a week. You’ll guide service teams, maintain operational systems, keep the restaurant floor running with calm authority and ensure the property’s F&B offering stays aligned with Village n Life concepts, manuals and SOPs. With an approach that blends structure, attention to detail and level‑headed decision‑making, you’ll support the wider property team and help maintain a high‑performing F&B environment. Key Responsibilities Operations Maintain reliable service standards in the restaurant and public‑facing areas. Oversee dining‑room setup, daily operations and Front of House/Back of House coordination. Communicate with service, kitchen and reception teams regarding reservations, events and arrivals. Respond promptly and professionally to guest concerns. Uphold hygiene, sanitation and safety regulations. Control operational costs, monitor waste and maintain future‑proof procedures. Process payroll and maintain accurate departmental records. Ensure staff operate within established standards and protocols. Management Organise and supervise shifts, ensuring departmental coverage. Manage Duty Manager shifts as the senior person on property when required. Guide financial controls, budgets and cost‑saving initiatives. Sign off stock takes, gratuity allocations and Micros reports. Run special events alongside the Events Manager. Ensure all SOPs and company policies are followed. Maintain strong working relationships with guests, suppliers and internal teams. Human Resources Oversee staff training records and ensure all evidence is up to date. Prepare weekly rosters and ensure contractual hours are met. Uphold grooming and uniform standards. Conduct or support performance reviews and HR‑related processes. Maintain staff files, assist with disciplinary matters and ensure fair procedures. Finance Monitor budgets, payroll records and financial transactions. Report on departmental performance, stock movement and staffing. Maintain stock‑control systems and sign off variance and beverage count reports. Support monthly and annual budget targets through accurate tracking. Sign off staff hours and payroll adjustments as required. Administration Produce management reports and sign off monthly income statements. Maintain HR files for F&B staff and assist with HR‑related tasks. Manage the events store and ensure organisational accuracy. Maintain knowledge of in‑house guests and walk‑in clientele. What We’re Looking For Grade 12, with hotel school or accommodation‑management training beneficial. 3-5 years’ experience in a similar role within a 4/5‑star environment. Strong knowledge of F&B operations and hospitality service standards. Confident working knowledge of MS Office and Opera. A steady communicator with sound judgement and problem‑solving ability. Operational awareness suited to a seven‑day hospitality setting. A leadership style that encourages consistency, accountability and teamwork. Clear understanding of cost control, labour management and stock processes. Reliable, hands‑on approach with the ability to stay calm under pressure.
